David Kaplan

David Kaplan is the founder and owner of Death & Company, a New York City nightlife destination, as well as the co-owner of Proprietors LLC, a full service hospitality company, with Alex Day.

David has worked in the hospitality business since the age of 13. In the summer of 2006, he opened Death & Company – a nightlife establishment that represented a return to service, craft and authenticity. Soon after the establishment opened, Death & Company received both critical and customer acclaim for its inventive, innovative, authentic cocktails and its attention to service, detail, design and decor. Death & Co has been featured in countless publications and many top roundups of worldwide bars. At the 2010 Tales of the Cocktail Spirit Awards Death & Co won American’s Best Cocktail Bar and World’s Best Cocktail Menu.

In 2008 David released a high proof molasses-based rum, Scarlet Ibis, with Haus Alpenz Importing. In 2009 Proprietors LLC opened the Philadelphia based cocktail bar The Franklin Mortgage & Investment Co. Also in 2009 the interior design book Dark Nostalgia came out, recognizing David’s design work in Death & Co amongst many of his idols including Roman & Williams, Julian Schnabel and Philippe Starck.

David currently lives in New York and LA and is opening new establishments and growing Proprietors LLC with a host of new projects throughout the states and abroad.

Alex Day

Alex Day, co-owner of Death & Co and Proprietors LLC with David Kaplan, is a bartender and hospitality consultant who works with restaurants, bars, and spirit companies, currently advising on various projects in the US and abroad.

Alex has consulted for numerous restaurants and bars, ranging from full service beverage and hospitality programming to staff training, bar design, educational seminars, and general hospitality logistics.

In addition to operations programming and beverage development, Alex has a strong interest in spirits, cocktails, wine, beer, and hospitality education, teaching classes and seminars at The French Culinary Institute, The Astor Food and Wine Center, Tales of The Cocktail Conference, Manhattan Cocktail Classic, Copenhagen Spirits & Cocktails and numerous specialized events. Alex has also been a contributor to print and web publications, including ReadyMade magazine,, and Tasting Table.

Alex lives in Los Angeles, CA and Brooklyn, NY, and is currently hard at work on Proprietors projects around the world. He spends too much damn time in airports.

Devon Tarby

Devon Tarby specializes in cocktail execution and creation, currently working at The Varnish in downtown Los Angeles. Devon has comprehensive experience with hospitality and beverage service in a range of environments, from high volume, fine dining restaurants to small, boutique cocktail bars, as well as hotel event sales and planning. Devon lives in Los Angles, CA.

Yael Vengroff

Yael Vengroff specializes in cocktail execution, beverage development, and operations management. Beginning her hospitality career at the age of 15, Yael has spent the years since at various positions within restaurants and bars. Before joining ProprietorsLLC, Yael gained experience in high volume night clubs, fine dining restaurants, and boutique cocktail bars, most recently as Head Bartender of New York City’s acclaimed Painkiller. Currently, Yael is Project Manager for TBN Mumbai, heading up the bar program in South Mumbai for a period of one year.

Alexander Kwong LEED AP (AK-47)

Alexander Kwong is a designer who specializes in architectural and graphic design.

After graduating from the University of Texas at Arlington, Alexander has taken on various roles in the design industry, ranging from project coordinator to fabricator. His design interests include parametrics, information graphics, branding systems, installation architecture, vintage cars, and vintage foreign movie posters.

Alexander currently lives in Los Angeles, CA.
